ENOUGH WITH THE GROSS THREADS!

ENOUGH WITH THE GROSS THREADS!

What's your all time favorite non-meat meal? I'm looking to expand my meal ideas. I have a million veggie cookbooks but most of the recipes call for the weirdest things. I feel like I'm eating too much pasta (but that's my favorite.)

Spinach/melted swiss/tomato

take frozen spinach put it in a bowl, put slices of Swiss on top and chop a tomato into small pieces.. melt in microwave till spinach is cooked.. mix together and eat..
..it tastes amazing and so good for you!!

You should have directed the subject towards us vegetarians! Check the recipe board, I've posted some of my favorites there in the past!

Re: ENOUGH WITH THE GROSS THREADS!

There are TONS of vegetarian recipes that I love. What kinds of things are you looking for -- are you looking for any particular ethnic cuisines or specific ingredients you want to use? I'm turning off the computer for the night now, but I can send you some recipes tomorrow if you like... let me know what you're interested in and I'll see what I have.

ETA: some faves (off the top of my head) are eggplant parmesan, potato leek soup, tomato/basil/mozzarella sandwiches, tom yum soup (spicy Thai soup), various kinds of burritos (there's one with chipotle portobello mushrooms that I really like), peanut noodles with tofu and cucumber... I could go on and on!

EGGGGGGPLANT!!!!!

Ok, no seriously, how about those black bean cakes I was telling you about? I don't have a recipe but it seems simple enough... mushed up black beans, fry them up and there you go, with some NON-DAIRY sour cream, guacamole and salsa.... mmmmmmmmm

How'd the pesto come out?
I'm a spoiled little brat because I love it, but I don't even know how to make it - i have a husband to do that kind of stuff for me

Palebride ... the pesto came out AMAZING! Thanks for the idea! (PS -- My hubbie does most of the cooking too, we're so lucky.)

We're eating eggplant rollatine and angel hair with homemade sauce tonight. YUM!

It's such a relief!!!! My father's idea of 'making' dinner was reheating something that he got from my uncle's deil!!!
And, since Tom is 100% Italian.....and I am not, all of the Italian cooking (sauce, etc) is up to him!!!
Although, I did make the pizzas!

Oh goodness...don't even get me started on my parents' cooking!
Lucky for me (and our daughter) that I'm marrying a chef! Otherwise, we'd be eating hot pockets and nachos for the rest of our lives!

Joe is Italian too, but he and his mom gave me all the secrets to delicious meals. Garlic, garlic, and more garlic!
