Not sure how low cal or what you like, but these are my favorite low cal quick and easy dinners:
Salmon - coat with mustard and a bit of maple syrup and carroway seeds, then just bake in oven. Good with brown rice and/or cooked veggies
Chicken apple wraps - 100 cal wrap, spinach, baked chicken breast, 75% fat free cheddar cheese, and 1/2 granny smith apple. I chop everything up, mix it together, and drizzle some dressing (apple cider vinegar, honey, mustard) on top
Light fried rice - go heavy on the veggies, but its garlic, onions, carrots, broccoli, sprouts, mushrooms, snow peas all sauteed, then throw in some cooked jasmine rice, soy sauce, a bit of sesame oil, and sesame seeds. You can add chicken too.
Hope that helps. I'd love to hear some other ideas!
