Ok, so i'm completely far away from my wedding, but my FH is the same way, with the whole outdoorsiness (is that a word?) thing. I'm not sure if this helps, but there's this website called Excitations.com, it offers tons of different experiences (kayaking, golfing, hot air balloon rides, food/wine tastings; you name it, they prob have something for it). You can either purchase a particular one or buy by a price range (say, for ex, the green circle package includes any experiences up to $150; some of them can even be bought for couples), that way if you're not sure what he'd want, he can have his choice of a few options. I got a wine tasting package for my parents for their anniversary and they loved it. Also, if you need it by this weekend, they can just email you the gift certificate (this also saves you the $10 s&h) and you just wrap it up or something.
