we agreed to no wedding day presents, but I JUST had to get him a pocketwatch with a blue face (his fave color) and got it engraved with his initials on the front and 'Our Love for all time' and our wedding date on the back

While I LOVE your gift and am sure he will also love it, I think it is a bit unfair that you agreed to no wedding gifts and then got him such an expensive one. He may feel just awful and feel that he is not a really good husband that he didn't get you anything. I would tell him that you sorta changed your minds and want to exchange gift. Set a value limit if that helps.
