Final count and seating chart...NEED HELP!

I am giving my venue about 2-3 people less than my final count. I know for a fact I will have at least 2 no-shows. The only thing is, how do I do the seating chart?? And what do I do if these people show up???

we gave them a final headcount including the potential no shows but short paid them x less for the people we were anticipating on not coming. we still put those ppl on the seating charts in case they do come and so that it's set up correctly. and if they show up the day of, you just have to pay the RH the diff. How were you able to pay them less than ur final count? Was this at their suggestion at yours?? Thats a great idea, I wonder if my RH would let us do this.

the MD/waiters keep track of how much food they serve during reception so that's how they know how many people there are the day of

I plan to do the same thing and according to my family this is how to do it...
Figure out table sizes from rh (for example mine said 8-12 is one table and 13-16 is a larger table)
Based on that pick tables to eliminate guests from on the seating chart (meaning don't eliminate 2 from a table of 14 bc then the actual table will be too small)...so we are going to say some of our 12s are 10 but obvi make up placecards for all guests. Then you just need someone to go to the matre'd during the cocktail hour and tell them to add two seats to tables xx. By the end of the night you will know who didn't show (if anyone) so when they want you to pay for the additions you can tell them xx people were missing from xx table and then hopefully it works out even.

Seems super complicated but like I told my mom as long as I'm not the one tracking it she can do what she wants!
