you can discuss

-what you need to bring and when
-explain how you want things set up (place cards, menu cards, cake , etc)
-let them know who your vendors are and time of arrival
-talk about any upgrades you might be interested in: ventian, chocolate fountain, etc
-ask questions like waitstaff per table, number of bartenders, number of bars, champagne toast, candles allowed, etc,
