So I made eggplant parm last night and used the Mandoline Slicer to get my eggplant nice and thin. I used it once before and had no problems.
This time, I take it out of the box and I go to turn it upside down to take off the food holder and i slice my finger on the blade. Seriously, the irony in this is that I work at a deli and use a huge professional slicer all weekend long and THIS is what I slice my finger on! I could not believe how much the cut was bleeding. It's the tiniest little slit and it just wouldn't stop. FH and had to help me put the band-aid on cuz I couldn't do it myself without stopping the bleeding enough to get it on. My finger is throbbing this morning!
As a side note - I braved it and still made the eggplant and it was frigin delicious... well worth wound! LOL

Re: First battle wound with the Mandoline Slicer!
For our housewarming party we registered for a mini slicer at BBB. It was 100 dollars and just like the deli ones but smaller. Can i tell you I use it like every week. i have bought a mandolin, two actually, the first one was garbage, and the second one i sliced my finger on one day when i wasnt even using it!!!!! I was looking for something in my cabinet.
And yes!!! Thin evenly sliced eggplant is the secret to the best eggplant parm in the world!!

see that was what I originally wanted to register for (the smaller deli slicer). My MOH has it and it's like the best kitchen appliance to have! But we really don't have the storage or counter space for that right now. When we get a house I am definitely going to purchase one.
ETA: and YES, I cannot stand when I get Eggplant parm somewhere and it's thick sliced eggplant. It's just not the same and half the time when I get it and it's like that, I won't eat it. I'm also not a fan of when the skin is left on but that's just personal preference. I know a lot of people who actually like it like that but not I.

another fav! I actually saved a few pieces last night and didn't bread them and I plan to make grilled eggplant tonight.
It really is a great kitchen tool to have.
