The thing with tofu is it will taste like whatever you cook it with....so you need a tasty sauce....also it comes in different firmness. I tend to like the firmer tofu better.

Tofu isn't really diet food.... sorry to say!!! I love the stuff, though, but serving size and calories per serving aren't really what I wish they were!

Anyway, I could give you some recipes but they also work with chicken.

Don't forget when you're using tofu to wrap it in a few paper towels and put a plate on top of it with a heavy can for a half hour to an hour first to squeeze the water out so it's more firm. It's *much* easier to cook with that way because it won't just crumble!!

Best 'diet' way to use tofu is to stir fry some veggies (carrots, broccoli, scallions and towards the end mushrooms) in some peanut or veggie oil in a large skillet or wok and add the tofu in towards the end, along with some low sodium soy sauce. Add a little crushed peanuts at the very end for a little bonus crunch.

Did you press it first? You have to put it under pressure for a while to drain a lot of the excess water out of it, I do it for at least 45 minutes. You can also bake it to make it less mushy before you add it to your recipe.I wouldn't give up on it so easily.
