Re: For some reason..

Feel like cookin chicken? Does he like butter? I make this fast and easy chicken thingy called butter chicken (DUH)

you bread it just like chicken cutlets but instead you use crunched ritz crackers instead of bread crumbs. Then you put in shallow pan and put small pats of butter around it. Bake for about 20 minutes..quick, easy and really good!

Re: For some reason..

SHEESH! OK!! NO NEED TO GET SNIPPY!

You can use salmon steaks, large fillets, whatever you like for this...

In a shallow baking dish (I use a pyrex) coat the base with a little bit of olive oil and lay salmon out skin side down. If you remove the skin, use a little bit more oil.

Then in a small bowl combine:

2 Tbls. Honey
1 tsp. dijon mustard
1 tbls. lemon juice
Salt/Pepper to taste.

Brush mixture on salmon. Let it soak in for a few minutes in the fridge.

Then, rebast once more and coat salmon with a mixture of:

1/2 cup finely chopped pecans
1/2 cup plain breadcrumbs

Bake at 350 for about 15-20 minutes..until salmon is cooked through (flakes off and is no transparency inside).

Use more of less of the above ingredients based on the size of the salmon...

I serve it with rice pilaf. Yummy!!

Re: For some reason..

Thanks Theresa, I cannot wait

PS why would your fish be tough?? Salmon is a tender meat. Try it and let us know how it turns out.

Re: For some reason..

Chicken Wraps T are a great dinner.
I heat up wraps or tortillas
cut up some onion and peppers and cook them in a large skillet until soft, then add chicken strips and cook some more. When the chicken is cooked, add 2-3 tablespoons of salsa, stir. Then heat up some black beans or refried beans. Serve with cheese, sour cream, lettuce/tom and any other stuff you like. Yummy and quick.

Or you can make a nice london broil, with mashed pototoes and veggies.

Re: For some reason..

I just posted a fast and easy chciken dish yesterday and it got lost on the boards, I found a great website- kratft interactive kitchens- u put the main ingredient in and it gives you receipes. I tried the easy chicken, rice and broccolli diner last night and it was good. Here goes-
Ingredients
1 Tbsp.oil
4 small boneless ,skinless chicken breats halves (about 1 pound)
1 1/2 cups water
2 cups Minute rice uncooked
2 cups fresh broccoli pieces 1 can (10 3/4 oz.) can condensed cream of chicken soup Heat oil in a non stick skillet on med.high heat.Add chicken, cook 4 minutes on each side or until cooked through. Add soup, water to skillet, bring to a boil.Stir in rice and broccolli, Top with chicken, cover cook on low heat for 5 minutes.
* I added shredded low fat mozarella cheese on top as the last step until melted, and I also seasoned the chicken with garlic powder, salt, pepper, and paprika for extra flavor before cooking the chicken.*
