I stayed in the Sofitel in Rome and loved it. It's by Villa Borghese.

In Rome we stayed in Albergo del Senato (right outside the Pantheon) and in Florence we stayed at Palazzo Nicolini al Duomo. Both absolutely great and we would most definitely stay at both again if and when we get back to Italy.
I will be writing a review soon (just got back from our honeymoon).
