So I want to go to Fortunoff's this weekend to complete my registry, but more than three months have passed since my wedding, so returns are not going to be possible. Should I just change my wedding date on the website? Do you think I will have any problems if I do that?

It's worth a try! Or you could try to call the store and tell them that your date on the website is wrong - see if they buy it.
