ok...here's the french fries...I made them for the first time the other night...mmmmmm
Preheat oven to 400 Cut about a pound and a half of potatoes into 1/4 inch pieces (french fry size). Put them in a baggie with 1tsp vegetable oil and some salt...shake it up good (seal it first )
Lay them flat on a greased baking sheet and cook for 40-50 minutes (turn them over after 20 minutes)
When they're almost done cooking, melt 2tbls butter, 1tsp parsley, 1tsp parmesean cheese and 4 chopped garlic gloves in a frying pan
when the french fries are done cooking (brown and soft), add them to the pan with the melted garlic butter and toss them around.
Serve immediately.

I used to roast the garlic and then mash it with the potatos but lately I have been lazy. Now I just throw one or two peeled garlic cloves in the potatoes while the water is boiling then mash them right along with the potatoes. It adds a nice garlic flavor with no x-tra work.
