We did the Ziplining. I would definitely recomend it... so much fun.

The other tour that we didn't get to go on (because of the hurricane) is 'Joe Knows.' Everyone raved about it while we were at the resort. It leaves right off the bay if your staying at the Regency. It takes you to all the hot spots of the island (Pitons, Volcano, Snorkeling, local place for lunch, and not sure what else.)

Do you book these through Sandals or from randoms on the beach?

We booked the ziplining through the resort. It was really easy and we didn't seem to have any problems.

I believe the 'joe's knows' is something that's done through the resort, but i'm not positive. I would just give them a call to find out.
