My venue offered a more extensive dessert or add-ons (lighting, extension of reception) that would make up for the difference.

Some venues will allow you to count your vendors towards your minimum. (Just in case they won't throw anything in.)

I'm no longer short (last minute addons and switching response from no to yes), but when I asked during my finals meeting I was approximately 12 short. Like the above poster mentioned they also offered to use the balance to cover vendor meals or kids plates.
