With a 250 person minimum, what would be a good number to invite? 350? 400?

They say to expect a 10-20% 'no' rate.
I think it gets higher as you invite more people and people from out of town. . .

I would start with around 325. You can always add more people later.
My minimum was 275 and we ended up inviting 350. 312 was our final count.
