Here's an easy one. You can double up on the ingredients and make two. It freezes well. Out of all the meatloaves I've tried, my FI likes this one the best.
From Progresso... 1 lb. lean ground beef 2 eggs 1 cup of bread crumbs (I use the one with Italian seasoning) 1/4 cup grated Parmesan cheese 1/4 cup finely chopped onion 1 (14 oz) jar of tomato sauce (or canned tomato sauce)
Heat oven to 350. Mix all ingredients except sauce. Add i cup of sauce and mix well. (Don't be afraid if it seems too runny. Just add a bit more bread crumbs just until the mixture seems to be able to hold its shape. You don't want it too watery OR too dry). Loosley press mixture into an ungreased loaf pan. Bale at 350 for 40 minutes. Pour remaining sauce onto of loaf and bake for an additional 15 to 20 minutes. Let stand for 10 mintues before cutting.
I serve this with spagetti on the side. You can also use this mixture for meatballs but I would cut down the sauce a bit to make the mixture more firm.
You can also make this with ground turkey if you want.
