Today was my school's cookie swap. I made Coconut Biscotti, but I dyed the coconut red and green. They're so easy to make, almost no prep time, but 1 hr cooking time..Here's the recipe if anyone's interested
1 1/2 cups all purpose flour 3/4 teaspoon baking powder 1/4 teaspoon salt 1/4 teaspoon baking soda 1/8 teaspoon fresh ground nutmeg 3/4 cup sugar 1 teaspoon vanilla extract 2 large eggs 1/2 cup coconut
Preheat oven 300 degrees. Combine all dry ingredients (flour, baking powder, salt, baking soda, nutmeg). In a separate bowl, combine eggs, sugar and vanilla; beat with electric mixer for 2 minutes on medium speed. Add flour mixture and coconut to egg mixture and stir with spoon. Dough will be very sticky! Turn dough out on a heavily floured surface, knead 7-8 times. Shape dough into a 15''x3'' roll. Place on a baking sheet lined with parchment paper, pat into 1'' thickness. Bake for 40 minutes until golden brown. Cool on wire rack for 5 minutes. Cut roll diagonally into 1/2'' slices and stand upright on baking sheet. Bake again for 15-20 minutes to crispen sides. Remove from baking sheet and cool completely on wire rack.
I'm baking all day tomorrow. Maybe I'll add them to my list! Thanks 4 posting.

I need to crash and say yum!!! Those sound and look delicious! I made a cranberry and pistachio (red and green) biscotti that I dipped in white chocolate and then sprinkled colored sugar on... it's an everyday italian recipe from the food network. Gotta love Giada! I need to try your recipe though, they sound amazing!
