I would say an updo unless you really want her hair down. I think the curls will hold if they are pinned up with a ton of product in it.
My hair is very fine and doesn't hold a curl well either but you bet I'll be making certain it will on my wedding day! But to avoid the hassle and the crunchy curls, I'd say a very chic updo. She'll love it, it'll make her look so grown up.
If her hair doesnt hold curls at all, I'd say do an updo. Usually, the hairdresser knows what styles to do on certain types of hair.
How about a low chignon off to the side? I think that would look really pretty.

I'm thinking of this because my hair is japanese straightened and i am not fighting with it to get it to curl
