We didn't go to Kauai, but here is what we did in Maui:

- Old Lahaina Luau, don't recommend it, its the most traditional but the food was awful and it was kind of boring, I would have rathered a less traditional yet more entertaining luau

- Blue Water Rafting, this was the snorkeling tour we did, it was absolutely amazing. They have the highest rating on activities on tripadvisor.com

- Hike maui, if you regularly excercise, I would do this, its not a super hard hike. It was just so cool to walk through some of the rain forest and jump off cliffs.

- Road to Hana, worth the 4 hour car ride, it never once felt like it, the scenery is breaktaking

- Whale Watching, but thats only Jan-mar.

I would also recommend eating at Mala, Mama's fish house and Kool Kat Cafe.

In Kauai, I highly recommend the helicopter tour. We used Island Helicopters.

In Maui, I would recommend the road to Hana. We did a luau on both islands.. We did it at the Grand Hyatt in Kauai and the Feast of Lele in Maui. I liked the Maui one more but FH liked the Kauai one more.

We're going to Maui as well. We're gonna do the road to hana too. Also going to the sunrise at haleakala park. You are 10,000 feet up and above the clouds. You can take bike tour or take your own car. You have to get up at 2:30 AM and drive about 1 1/2 hours up. Sunrise is around 5. I hear its breath takng...SUNRISE

Similar to Christine, I thought the food at Old Lahaina Luau was horrible. But not sure any of the others would be much better -- mass produced food is never great.

We did a Trilogy Snorkle tour to Lanai and had an amazing time. LOVED every second of it.

We also did a plantation tour which was fun-- lots of yummy fruit tasting.

Road to Hana is a must...so beautiful.

We also went to some of the wineries and thoought it was worth the drive-- totally different climate,

As for restaurants...Mamas Fish House, Hula Griill, Kimos, and Leilani's on the beach were all great
