Re: Healthy Dinner Ideas
We do chicken and steak alot....with a vegetable (asparagus, artichoke, brocolli, etc). No carbs...on rare occasion will have carbs...but 3 weeks till wedding and they are banned!
Or we do salads....or tuna and celery or hummus and celery, etc. Sounds boring but very yummy!!!!

Re: Healthy Dinner Ideas
I bought a cookbook from borders for $3.99 not too long ago where all the recipes were less than 3 carbs. I'll give you the title and publisher when I get home tonight.
In the meantime try looking up recipes on Atkins.com...they have a ton there.

Re: Healthy Dinner Ideas
Spinachy chicken rollups Makes 4 servings
This is a great standby recipe that can be prepared in 10 minutes, with about 30 minute cooking time. It's delicious and easy to 'fool' the kids (or husband) into eating spinach! Goes wonderfully with merely asparagus as a side. To keep the calories low avoid serving with starches.
MODIFICATIONS: Feel free to substitute other soups instead of cream of chicken. I like Campbell's Cream of Mushroom and sometimes I even mix the two! Also for non-veggie eaters like my dad, I make it with stuffing inside or even wild-rice. It adds calories obviously! You can also leave off the cheese for the super calorie-conscious though I think it tastes infinitely better with it.
Ingredients 1 lb Chicken Breast, thin sliced, lean 1 lb Baby Spinach 120 g Healthy Choice Virginia Ham 2 oz Provolone 2 cups 98% Fat Free Campbell's Cream of Chicken soup
Directions
1. Roll one thin slice of chicken around a handfull (as much as you can cram in there!) of baby spinach.
2. Wrap one or two thin slices of Virginia honey ham around that (use opposite seams so the roll won't fall apart!)
3. Wrap one (or better yet, a half!) thin slice of provolone around the ham and chicken (opposite seams again!)
4. Place in casserole dish and pour in cold or lukewarm soup cut with water to a consistency you desire (I suggest about 0.25-0.5 can water for a full can of soup)
5. Cook at 400 deg C for about 30 minutes until chicken is thoroughly cooked. Occasionally spoon soup over rolls to keep moist and stir soup. Ham will brown on edges. Cheese will melt.
6. Serve with steamed broccoli or asparagus to keep the nutrition content up and the calorie content down.
7. Please note what is missing from the calorie tally is the soup as it won't register for some reason. The soup I indicate you should use is 70 calories for a 1/2 cup which is about what should be poured on each person's dish. So the total for the recipe is just shy of 400 calories.

Re: Healthy Dinner Ideas
dump chicken
preheat oven to 350, sprinkle chicken cutlets with basil, oregano, salt & pepper. Place chicken cutlets in a glass pyrex, dump a can of diced tomatoes (it's like a 14 or 15 oz, I use the italian seasoned ones) and drain a can of small pitted olives and dump that on top too, bake for 30 minutes, or until the chicken is done cooking.

Re: Healthy Dinner Ideas
Go to Cotsco.
Buy big bags of vegetables that you can steam in the microwave.
But frozen salmon in packs. Season with a little salt/pepper/parsley and grill on the stove.
Black beans/red bean/pinto beans are loaded wih proteins and fiber.
Brown rice is very good to eat also. tons of fiber.
Chicken slices which you can grill with seasoning or make like a Greek chicken (season chicken with olive oil, tomatoes, onions, a litte vinegaratte)

Re: Healthy Dinner Ideas
If you don't own one already..get a George Forman grill...I make chicken a ton of diff ways on there...and I love, love LOVE Mrs. Dashes seasonings...dinner is done in about 15minutes..I just slice the chicken, throw on some Mrs. Dash and VIOLA! It's also perfect now that they summer is coming because you don't have to suffer from the heat from the oven...
