Healthy Shrimp recipes:

Please help!

I hope these posts help someone else too. I am so trying to have healthy lunch and dinners. Lunch is easy but dinner easy to think of ideas. I wanted to do WW but money is an issue so I decided not to but still want to lose the weight in order for the dress to fit me right.

One of my fav shrimp recipes:

WW Coconut Shrimp

2 spray(s) cooking spray
2 large egg white(s)
3/4 cup(s) all-purpose flour
6 oz beer, about 2/3 cup
1 1/2 tsp baking powder
1/4 tsp table salt
2 cup(s) sweetened coconut flakes
24 large shrimp, peeled and deveined (leave tails on)
Instructions
Preheat oven to 450ºF. Coat a large baking sheet with cooking spray.

In a medium bowl, whisk together egg whites, 1/2 cup of flour, beer, baking powder and salt. Place remaining 1/4 cup of flour and coconut in two separate shallow bowls.

Holding shrimp by their tails, dredge each shrimp in flour and shake off any excess. Dip flour-coated shrimp into egg batter and allow excess to drip off. Roll shrimp in coconut and turn to coat both sides (press coconut onto shrimp to make it stick).

Transfer shrimp to prepared baking sheet and spray surface of shrimp with cooking spray.

Bake until coconut is golden brown and shrimp are bright pink and cooked through, about 10 to 12 minutes.

Flavor Booster: To put crunch in this dish, reduce the coconut flakes to 1 cup and add 1 cup panko, light Japanese breadcrumbs available in some supermarket fish departments.

This is A W E S O M E!!

I am going to make it again on sunday...

1 pound frozen, shelled edamame
1 orange
1 pound frozen, fully cooked medium shrimp, thawed
1 head of lettuce, washed and shredded
2 scallions, trimmed and sliced
1/4 cup rice vinegar
5 tablespoons soy sauce
1 tablespoon honey
2 teaspoons white vinegar
1-2 shakes garlic powder
4 teaspoons sesame oil
20 drops of hot sauce
1/8 teaspoon pepper
2 teaspoons sugar
1/2 teaspoon salt
1/3 cup olive oil

Cook the edamame according to package directions. Drain and cool.

Peel oranges, break into sections, and cut each section into 2-3 pieces.

In a salad bowl, combine edamame, orange pieces, shrimp, lettuce, and scallions.

Make the dressing by whisking together the rice vinegar through the salt. Slowly add the olive oil, continuing to whisk the mixture.

Add the dressing to the bowl, and toss to combine.

Add salt as needed.

Re: Healthy Shrimp recipes:

How funny you said Shrimp; Thats what FH is getting for dinner for tonight with maybe some eggplant or something and a side of hummus;

Grilled Garlic Shrimp with veggies over Whole Wheat Seasoned Cous Cous

1 lb Shrimp (peeled and devained)
1 tbl sp garlic powder
1 tbl sp Extra Virgin Olive Oil
Cherry Tomatoes
Peppers (optional)
Sweet Onion (cut in cubes)
Whole Wheat Cous Cous ( or the regular)
1 TBL chopped chives
Salt and Pepper

Preheat your grill or Broiler
In a bowl combine:
1 tbl sp garlic powder
1 tbl sp Extra Virgin Olive Oil
This will create the coating for the shrimp.
You can toss the shrimp in this mixture to lightly coat each one or you can brush it on once the shrimp are on the skewers...
***Soak Skewers btw, before using for like a minute. This prevents burning. Daddy's secret

Skewer the Shrimp, Cherry Tomatoes and Sweet Onion. Grill or broil until Shrimp are bright Red, usually 5-7 min. At the half way point, rotate, and as an option, brush more oil and garlic on them (thats as per your taste preference).

While thats cooking, prepare your Cous Cous according to the package. Nix the oil or butter if they say to use it. No need. After letting the Cous Cous sit for 5 min after cooking, fluff with a fork and add your Chives and Salt and Pepper.

Arrange the cous cous on the plate, and remove shrimp and veggies off skewers onto Cous Cous.

Serves about 4-5 people.

With that serve a salad or some homemade Hummus and carrots.

High Protien and filling. You can use the left over shrimp for tomorrows lunch or on a salad...

Sometimes I squeeze lemon over the shrimp to bring in something different right before I serve the meal. Its quick and easy and should be about 20 min to cook...
