This is the last thing we need to decide on before our menu is completely set!!
As a wedding guest, would you prefer a pasta station (a chef making pastas to order - there would be a choice of a couple of pastas and a choice of sauces and toppings), or a risotto station (risottos made to order by a chef with choice of toppings)??
Not sure if pastas are too played out at weddings, or if risottos are too unusual..

The rice itself does not contain dairy.
But the vast majority of the time cheese is used as an ingredient in the overall dish . At least that has been my experience. Just my two cents.
I'm sure some sauces include the cheese, but if the station is set up like the pasta station where you add the sauce, then you would have a choice. But, I do know what you mean.
