Something like this:
Dear Mr/Mrs. So and So,
I just wanted to thank you for taking the time to interview me on February 28, 2006 for the position of ***. I am extremly excited about the position and I believe I would fit perfecetly into your organization/company/agency. II look foward to hearing from you soon.
