Don't overthink this. It's really not something he will put a lot of thought into!

'Thank you ' 'Sincerely' 'Regards' or nothing at all (just put your name) will be fine.

The deacon at my church signs all of his emails 'Love' which I find somewhat amusing.

But don't worry yourself over this! I just close my emails to him with 'Thank you' or just our names.
