Here is an easy recipe for the holidays!
Maybe you can use it!
Spinach Pie
1 Package of chopped frozen spinach (cooked thoroughly or thawed thoroughly and drained thoroughly)…. Use your hands to squeeze any excess water from spinach
4 eggs (beaten)
½ of a large package of Polly-O Mozzarella Cheese
(Cut into little cubes)
Grated cheese – as much as you like. (To your taste)
Some black pepper
1 (8 – 9 inch aluminum round pie plate) greased with margarine and sprinkled with seasoned bread crumbs to make the crust
In a bowl, hand mix together – the spinach, eggs, black pepper and both cheeses. (Leave a few cubes of mozzarella on the side). Spoon this into the greased and breaded pie pan. Sprinkle the remaining few cubes of mozzarella cheese on top and a little bit of bread crumbs.
Bake in a pre-heated 350 degree oven for 40 minutes.
YOu can also double it and put in a lasagna pan...Enjoy!!!
