tzatziki - plain yogurt, chopped up cucumber ( reaaaally fine- no seeds), garlic and onions. u can garnish with a tiiiiiinnny bit of paprika on top

souvlaki..is really just pork loin cut in cubes ( u can use chicken boobs.. salt, pepper, oregano and lemon. and just grill it on the pan

* 2 cups of thick Greek yogurt - FAGE makes 2% so you can get that in a medium container
* 2-4 cloves of garlic, finely chopped- depending on ur taste
* 1/2 cup of diced or grated cucumber preferably kirby cause it doesn't have seeds- must squeeze all the water out...so about 2-3 small kirbys
* 1-2 tablespoon of olive oil
* 2 teaspoons of red vinegar
* salt & pepper to taste..
NOT necessary but u can chop some dill in there for flavor..

U can take the easy way out for chicken souvlaki
usually butchers have the sticks all ready and marinated for you You can buy those and just add some
cherry Tomatoes, onions, peppers-just take the meat off the skewers and do one part mean, one part veggie and then just stick the on a grill pan or u can bake them in the oven either way-
In the meantime take 2 tablespoons of olive oil, squeeze a lemon, salt, pepper and oregano to taste.. mix it.. once the meat is ready- just pour on top...

Take a skillet and lighty oil some pita bread and toast them in a skillet...

U can make some pilaf with this meal, or some roasted red potatoes or u can be bad and cut up some fresh french fries and fry them up..

HTH

cut up potatos in strips of 4 or 5..
put them in a pan and generously season them..salt pepper oregano..even some parsley..

put a ton of olive oil alll over them and mix it with water too.. fil the pan with water..like 1/4 of the pan.. and squeeze lemon all over the potatos and cut some lemons up and leave them in the pan with the skin..

cover the pan with aluminum foil..and bake for 30 min? keep checking to see when they are done. you'll know when they are cooked whn u pierce them with a fork and they fluff lol

then u take the aluminum foil off and broil them for a few min till they get alil golden.

add more lemon and olive oil if u want on your dish
