I agree. You can always do housework. But you can't always get onto LIW!!!!

Wow....me too....we all really are addicted! Although on the side of housework, bake! I have bananas that are well past their prime and are destined for the oven.

--------------------------------------
Banana Bread
1/2 cup apple sauce
1/4 cup (1 stick) butter
2 eggs
1 cup sugar
3 crushed bananas (take the ones that are all bruised and gross)
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 pinch salt
1/4 cup nuts (optional...I don't use them)

Grease 2 loaf pans and preheat oven to 325 degrees. Place the first 4 ingredients in the food processor and blend until there are no more large chunks. Add the remaining ingredients and blend until combined. Pour into he loaf pans. Bake for 45 minutes, the top will be golden brown (and delicious) and the toothpick should come out clean from the middle.
--------------------------------------

***SIDE NOTE*** I have tweaked this recipe to be healthier with less butter, but the 2/3:1/3 applesauce/butter is about as low as you can go without messing up the texture. Also you'll be tempted to put it all in one pan, but trust me when I say that's not a good idea....made that mistake once and I had a gooey bread...not so much on the tasty scale.

Happy housework (and hey, baking really isn't housework right?)
