We stayed at the Hilton in the Corridor (between Cabo San Lucas and San Jose Del Cabo). It was wonderful!!!!!

We stayed at the Hilton Resort but I have to say that we had dinner at a few others and all of them are just amazing. I really loved the Hilton and would go back in a heartbeat. Everyone was so nice and very accomodating. The food was amazing and the infinity pool was the best!!!
As far as places to go things to do - my recommendations:
Shopping Tour - just do the Cabo San Lucas part - the rest is not necessary. The glass bottom boat is fun!
ATV - We used Ranchero Tours and it was great - three hours in the desert and at a beach. It was a blast!
Spa - definitely take advantage of the spa at your resort - it's so relaxing!
Cabo San Lucas - Margaritaville and Cabo Wabo for lunch/dinner...also check out Squid Roe...fun places to hangout and get a good meal.
