Honeymoon Suggestions!

I need some Honeymoon suggestions, I really have no idea where to go! Our original plan was to go to Maldives or Seychelles, but that changed because after the wedding we want to go back to NJ (we actually live in Germany and are getting married in Austria) for a 2nd reception for those who cannot make it over here, and that would be kind hard to do witht he honeymoon...soo we decided to just go to NJ and then go ont he honeymoon from there...so probably somewhere in the Caribbean. I just don't know which island and which resort to go to though! There are so many and they all seem gorgeous.
Here are some requirements...

all inclusive (good cocktails,a nd a variety of fod because I am picky )
great service
friendly people
nice beaches (white sand, crystal clear water)
shouldn't be overly crowded or too touristy (maybe a bit secluded)
sightseeing possibilities/ day trips
And there absolutely has to be a 'dolphin excursion' tye thing where we can swim with some dolphins.
