Housewarming Party

FH and I are having our housewarming party mid September . We invited about 70 people (i know we are crazy) but expect about 50 including some children.

I need some easy appetizer items....or anything you think would be good for this kind of party.

Thank you!

Re: Housewarming Party

I always like the idea of making a vegetable topped flat-bread with a little bit of melted cheese on top. Cut into small, square-sized pieces. You can go to a pizzeria and ask to buy some dough. Everytime I make this, I get lots of compliments!!!!!

Re: Housewarming Party

You can get a bag of frozen cooked shrimp at Costco or Trader Joe's - thaw and serve with cocktail sauce for an easy shrimp cocktail.

Or how about, peices of fruit (apple slices, grapes, bananas) with a fruit dipping sauce or quiches made without the crust and cut into bite-sized pieces?
I once made coconut shrimp - a little bit of work but very yummy and a big hit.

Here's the recipe for fruit kabobs with the dipping sauces.

Coconut shrimp to follow...

FRUIT KABOBS WITH COCONUT DRESSING

1 med. size red apple, unpeeled
1 med. pear, unpeeled
1 tbsp. lemon juice
21 unsweetened pineapple chunks
21 seedless red or green grapes
21 fresh strawberries, capped
Coconut Dressing
Cut apple and pear each into 21 bite size pieces. Add lemon juice; toss gently.
Alternate apple, pineapple, grape, pear and strawberry on a wooden skewer. Repeat with remaining fruit. Serve with Coconut Dressing. Yields 21.
COCONUT DRESSING:
1 1/2 c. vanilla low-fat yogurt
1 1/2 tbsp. flaked coconut
1 1/2 tbsp. reduced-calorie orange marmalade
Combine all ingredients in a small bowl; stir well. Serve over kabobs. Yield: 1 2/3 cups.

Oven Baked Coconut Shrimp with Pineapple Salsa
28 large shrimp (about 1 1/2 pounds), peeled, deveined, tails intact
1/3 cup cornstarch
3/4 teaspoon salt
1/2 to 3/4 teaspoon ground red pepper (cayenne)
3 large egg whites
1 1/2 cups flaked sweetened coconut
Nonstick cooking spray
Pineapple Salsa (see cook's notes)

Heat oven to 400° F. Rinse shrimp in cold water; drain well on paper towels until dry.

Combine cornstarch, salt and red pepper in shallow dish; stir with whisk. Place egg whites in medium bowl and beat with electric mixer at medium-high speed until frothy, about 2 minutes. Place coconut in shallow dish.

Coat baking sheet with nonstick cooking spray. Working with 1 shrimp at a time: Dredge in cornstarch mixture, dip in egg white, then dredge in coconut, pressing gently with fingers. Place shrimp on prepared sheet. Repeat with remaining shrimp. Lightly coat shrimp with cooking spray.

Bake 20 minutes or until shrimp are done, turning after 10 minutes. Serve shrimp with salsa. It is intended that this shrimp be eaten with a fork.

Yield: 4-5 servings.

Cook’s notes: Combine 1 cup finely chopped fresh pineapple, 1/3 cup chopped red onion, 1/4 cup finely chopped fresh cilantro, 1/4 cup pineapple preserves (or apricot-pineapple preserves), 1 tablespoon finely chopped seeded fresh jalapeno chili, 1 1/2 tablespoons fresh lime juice and 1/4 teaspoon ground black pepper; gently toss.

Here's a chili cheese dip. I can't find the quiche recipe

Chili Cheese Party Dip with Nachos

Ingredients:
two 8 oz. packages of soft cream cheese- preferably the low fat cream cheese so not to kill your guests!
two cans - Hormel chili ( without beans)
one 8 oz. package of shredded cheddar cheese or shredded taco cheese mixture
1-2 bags of round nacho chips

Lightly grease a 9x12 pan or casserole dish. Spread the cream cheese on the bottom of the dish. Layer the chili on top of the cream cheese and then sprinkle the cheddar cheese across the top.

Bake, uncovered, at 350 degrees for about 20-30 minutes until cheese melts and center is hot. Serve with round corn tortilla nacho chips for best dipping results without spills and messes!!

Re: Housewarming Party

Mmmmm I have a great Quiche recipe... Only thing is I always have to make two!!! Its also really quickto prepare, and then you get to 'forget about it!!'

Broccoli Quiche

2pkgs (approx. 10 oz) frozen broccoli
1 can cream of mushroom soup (campbells)
1/2 cup grated cheddar cheese
1/2 cup mayo
1tbs. grated onion
2 eggs
Pillsbury DEEP DISH pie crust

Boil Broccoli until not frozen, (not yet mushy, still just a little firm). Mix in bowl with Cr.ofMush soup, and other ingredients. Place in unbaked pie crust, and bake in oven @350 45-60mins. Stick a knife in middle to see if ready. Edges, and top should be a little golden, and firm.
