i just answered in your other post, but things that were actually there were not edited out of a pic. Most photographers are not going to do that, its something you can ask them if they can please do. But if there is something on the street then that will be in the pic, if theres a bag in the background then they will leave it in the pic. That goes beyond what they usually edit.
Mostly its lighting, some parts of the pic being blurry, b&w, sepia, adding some special effects maybe like through photoshop you can add sun rays so it looks like there was sunshine, ive even done this on photoshop but natural sunshine is still better. Fixing things such as your skin tone.

Re: How did your photographer...?
only have a fraction of my proofs back, but i expect it to just be lighting, blurring, color etc. my photog is a photojournalist and likes taking pictures that reflect real life... so i would be surprised if she photoshopped out items or changed things from how they were
there is one picture of our toasting flutes that has a fingerprint on the glass, i might ask her to photoshop that out, but other than that our pictures reflect our day, whatever that entails
in our posed pictures she had us stand so that weird things werent in the frame, or moved them if necessary. i did photoshop a cone out of one of our honeymoon pictures though
