You could pretty much do this anytime...but, you're right, things get discontinued and run out of stock...so it's probably best to wait until about 6 months before your wedding.

We did ours early, but I kept tabs on it. You just have to check it every so often to make sure things are still available. I did mine a year and a half in advance and everything has been fine all along. I had to make a couple changes along the way online, but nothing major!!
