Re: how many reading for non mass
Our Church only gave us the choice of 2 readings - one from the Old Testament and one from the New Testament.

I thought typically with a ceremony outside of mass you had a First Reading (typically Old Testament), Responsorial Psalm and Gospel Reading. Maybe give your Priest a call just to verify.

That's what I thought too. Do varify with your priest.

We have 2 readings, one from the old testament, one from the new testament. Those will be read by family members. The Deacon will read the gospel.

NO....it's one from Old Testament (1st reading), one from the New Testament (2nd readign) and the Gospel. You can also have the Prayers of the Faithful (the peitions) read as well. Many also do the Responsorial Psalm (goes between the 1st and 2nd reading)... most have it sung, but others just read it.
The only thing a Catholic ceremony does not have in comparison to a MAss is the Liturgy of the Eucharist. the above is the Liturgy of the Word, which will go right before the vows and nuptial blessing.
