Re: I feel like chicken tonight
depends on what kind of chicken you have defrosted already...you can make breaded chicken cutlets and bake it with veggies around it like red potatoes...or cut up the chicken into small pieces and cook it with stir fry veggies and put it over rice..or my fav is to grill chicken and cut up lemons and pour the juice over and put the lemon slices on it .

Oh, I love stuffed chicken cutlets! I used to love to stuff them with ricotta, mozzarella and parmigiano cheese and bread and fry them until they were crisp then stick them in the oven. If you believe it, I would serve this with a three cheese cream sauce penne baked in the oven with bread crumbs and parm cheese on the top to crisp it. Ultimate fatty! But I haven't fried or breaded anything since mid July. Makes me miss the good old days!

Re: I feel like chicken tonight
I'm crashing! I have an awesome chicken recipe that is yummy, easy and not fattening. It's called Dump Chicken. Season boneless chicken breast with basil, oregano, salt and pepper, put them in a 9x13 pyrex. Dump a can of italian flavored dice tomatoes (you can buy this in your pasta aisle) on top of the chicken. Drain a can of small pitted olives, dump the olives on top of the tomatos. Bake in a preheated 350 degree oven for about 35-40 min (depending on the thickness of your chicken breast). I like to serve this over rice but it is also good plain.
