I have to call my catering hall with my final number today...
do I give them the exact head count? or should I give them one or two people less in case of no shows?

As long as you're meeting your minimum, I would tell them a few less then are actually coming. Better to pay for a few extra then pay for empty seats.

I would not give them an exact amount--give them a little less incase of last minute cancellations, etc. I had 4 people cancel 2 days before the wedding and ended up paying for them anyway.

Yes, vendors included if you are planning to feed them.
We broke it out by adult plates, childrens plates and vendors since they were all different rates.

I am going to tell my hall that I will pay for my vendors that night. This way if 1 person doesn't show up that feeds 2 vendors(being at half price).
If you do that then give them the exact head count excluding your vendors, but tell them you will pay for the vendors that night. (So they can expect to feed them)

The vendors don't count towards your minimum, unless you're paying the full amount pp for them. You should give your hall a separate list with how many vendors you plan on feeding.

but how am i supposed to know how many vendors? i know the photographers and videographers sometimes come with their assistants-so i guess i have to ask all my vendors how many will be showing up that night?
