I feel like such a lunatic. I have been feeling really bad about how I have been all caught up in 'wedding mode' and I haven't thought about planning a more eco-friendly wedding. I am thinking about changing my caterer to someone who uses local food sources. I don't even know if this is possible since I already booked a catering hall but I really think that I should do it...maybe talk to the caterer about it or something. Has anyone heard of or have any reviews for 'Food for Forks' caterer?

I am not sure if it will be possible for you to switch to another caterer... I guess definitely do some research if that's what you really want. There are ways to have a more eco friendly wedding though, you can choose items on your menu to incorporate items that are what you want, for example, when choosing your menu ask where everything is coming from and choose what works for you.
You can do so much to ensure that things won't be wasted, etc... for example, you don't have to do menus or place cards, etc, to save paper... Don't stress too much, remember this is one day out of 365 in a year, and not that much that you do will hurt the environment that much!
Sorry I can't be more of a help, good luck with whatever you choose!

Re: I need help
I know it sounds silly but a couple really begins their life together with a HUGE carbon footprint from their wedding. I have always said that I did not want to do that and I have tried to think of the easiest ways to. I am not getting any limos, I will try to arrange shuttle transportation for guests who are staying at hotels nearby, I do not want to make wedding programs, I will use the least amount of paper that I can, using local, in season blooms for flowers and centerpieces and I have been talking to FH about significantly cutting back our menu due to the high percentage of waste that can accumulate after a Long Island wedding. I'm really trying here but it doesn't seem enough...so I thought maybe I should just have an eco friendly caterer for the food.
