I'm pretty sure like 3 days before you have to tell them how many people are definitely coming and have to pay them accordingly... our RH said if we have any last minute additions it wouldnt be a problem... But I dont think if you pay for 100 and 125 show up that would be OK.... you would have to let them know 125 were coming

Re: I WANNA KNOW
they want final numbers a week before with table charts. If more people show up they wont have seats for them so they will have to add places and you will have to pay for them. Thats why you should hunt done people who have not rsvped by the week b4

Re: I WANNA KNOW
you will tell your RH about a week beforehand what your final count is. if more show up than that final #, you will have to pay for each plate the day of. keep in mind that within that week from giving the final headcount to the big day, you may have people who cancel on you, or are just no-shows. we had two people cancel after we have our final headcount, and there was nothing we could do at that point. usually the RH will let you take the meals home. it's tricky to give the RH a different # than what your final headcount is. more often than not, you hear of people not coming or cancelling last minute, than showing up after RSVPing no.

Re: I WANNA KNOW
Just estimate how many you think you can guarentee (they'll make you guarentee a minimum anyway)
Then a couple weeks before they ask for your final #. Even after that I'm sure they'll be fine if you say a couple more people are coming. You'll just have to pay for them.

NO! your rsvp date should be a few weeks before the wedding so you have time to hunt down people who dont answer and then by the week before you need to have a final number

Definitely not, because then you will have to pay for those plates if people don't come!
I think that if people don't let you know THREE DAYS (or whatever it is for your RH) in advance that they are coming, then that is there problem. You can only do so much.
Also, I think this is why you should call of your guests that didn't RSVP. This way you don't have anyone whose card got lost or just forgot to reply.
Sorry if that sounds nasty, I'm having a cranky day.
