Re: Ice Cream Cakes
Just as a side note-
Before you go through all the trouble finding someone to make you one- make sure your RH has a place to store it....and remember that it will have to be out on display for a little bit while you do the cake cutting and take pics. i didn't notice your wedding date- but if its in the middle of winter it may be more practical because it can be boxed and kept out in the cold..maybe...
maybe a better option would be an ice cream grooms cake?
(PS- I also LOVE the idea of an ice cream wedding cake-I don't even really like regular cake--but my mother pointed out the problems that may come along with it....)

Re: Ice Cream Cakes
But to answer your question... Since you can't display an ice cream cake very long, you can just get sheet cakes from your Fiance's favorite place and have a mostly fake cake on display / for cutting. First check with your hall to see if they can store ice cream cakes for you. Since you won't be able to have the cake on display, so it is probably a good idea to get a second (mostly fake) cake. You can get a baker to make you one layer of real cake (for the cutting) and the rest of the cake out of styrofoam with icing on it. They do this all the time. You can use this to display and cut and then serve the ice cream cake as the cake. (They can store it in the freezer and cut it behind the scenes.) Since you can't put the ice cream cake on display for very long without it being all melted by the time it is served (it takes time to serve 100-200 guests!), you probably don't need it to be too fancy. You could get large sheet cakes and one smaller decorated cake (ice cream or the mostly fake cake I described) and just plain sheet cakes for serving. Many brides also do the fake cake thing when the style of cake they want on display is with fondant. This way, only the cake on display / for cutting is fondant and the cake that is cut and served (and not seen) is buttercream or something tastier than fondant.
Another option is to have a traditional cake and have your hall serve it with ice cream... or have an ice cream sundae bar. (Great, now I'm hungry and I don't think ice cream is appropriate for breakfast... )

Re: Ice Cream Cakes
My friend got married at East Wind and they kept the cake (from Carvel..it looked great too) in the freezer until about 30 minutes before the cake cutting. Let me tell you, when it came time for them to cut the cake, the could not even get the knife through it b/c it was still so frozen. She had all the same concerns about it melting and all of that but it was a non-issue. It definitley could have and should have been out longer.

Wasn't it?! His band's colors are green and black. The whole party was black or green. That cake topped it all off perfectly!
