So for final payments most places do not accept checks so what happens if you are over on the day of. Do they expect cash?

If you're over at the day of (at least for Fox Hollow), you can pay for the extra couple of people using a credit card. For example, if you paid for 160 with your certified bank check, but wind up having to add two more people two days before the wedding, you can hand them a credit card on the day of so long as you tell them as soon as you know.
