We are paying for the wedding ourselves with some help from my parents, should FH's parents name on the invite, even though they are paying for anything? What is the protocol?

You can do a few diff things:
Together with their parents, Jane & John
Amy and Alex Doe would like to invite you to the marriage of their daughter, Jane to John son of Beverlie and Ben Doe
Amy and Alex Doe and Beverlie and Ben Doe would like to invite you to the marriage of their children, Jane and John
