Re: irish soda bread

here ya go!
2 cups of plain white flour
4 cups of whole wheat flour
1 tsp Salt
1 tsp Sugar
1 tsp and a dash more of cream of tartar
1 tsp bicarbonated soda
1 tbsp baking powder
1 tsp veg oil
2 cups of sour milk or fresh milk with tbsp of plain yogurt

*** you can add some raisins to this as much or as little to taste. I usually presoak the raisins in a bit of warm water to plump them up.

Add salt, suger, cream of tartar, and baking soda to the all purporse flour. STir into a large mixing bowl. Add wholewheat flower and mix. Make a well in the center add milk, mixing dough until everything is clingie. Bowl edges should be clean - no extra flour. Kneed into a ball, flatten slightly on to a greesed cookie tray. Cut a cross into the top of the loaf. Coat with milk and some extra flour (white). Baked for 400F for 40 mins. Remove from the oven turn loaf upside down and return to the oven for 5 more mins.

When loaf is done you can tap on it and it will sound hollow. You can wrap it a dampened cloth (keeps it moist) and stand it on the side to cool or just leave on a rack to air cool.

****I make two types one dusted with flour and some powdered sugar dusting after it has been baked OR i make a glaze of sugar vanilla extract and water and drizzle over the loaf once cool.
