Irish Soda Bread - Any good recipes?

Anyone have a recommended 'good' recipe for Irish Soda Bread? I have two different recipes I've made in the past but I'm looking for something better

Happy St. Patrick's Day weekend!!! (a little early )

3 TABLESPOONS OF MELTED BUTTER

PREHEAT OVEN A 375 GREASE & FLOUR PAN

INTO MIXING BOWL SIFT TOGETHER DRY INGREDIANTS
ADD RAISINS, MIXING WELL TO COAT RAISINS WITH THE FLOUR. COMBINE THE EGGS, BUTTERMILK & BUTTER. ADD TO DRY INGREDIANTS, MIX LIGHTLY ONLY UNTIL DRY INGREDIANTS ARE MOISTENED. TURN BATTER INTO PAN. BAKE FOR 1 HOUR

*If you think the dough is a little dry, I go ahead and add a little more buttermilk until I feel the dough is moist enough

this is my Mothers recipe it's YUMMY!!!!

4 cups of Flour
1 cup of sugar
1 teaspoon of baking soda
2 teaspoons of baking powder
1 teaspoon of salt
1 egg
1 1/2 cups of buttermilk
1 1/4 cup of raisins (best way is soak raisins in water the night before makes them plump)
2 teaspoon of melted butter

combine them all in a big bowl.
mix with your hands.

cook @ 350 degrees for an hour

When done wrap in dish towel & cool on it's side (I put it on the dish tray)

this will make either 1 big loaf or 2 med size loafs.

Re: Irish Soda Bread - Any good recipes?

I have a recipe too that I make every year. Actually I just made it last night for my FMIL. My whole family loves it that you would think we were Irish.

Ingredients

2 1/2 cups all purpose flour
1 1/2 cups raisins
1 tsp baking soda
1 tsp double acting baking powder
5 Tbsp sugar
1/2 cup butter or margarine
1 cup buttermilk

Directions

In small bowl, pour boiling water over raisins, let stand 5 minutes. In large bowl, sift flour, soda, baking powder and sugar. Cut in butter until mixture looks like coarse crumbs. Drain raisins, stir into flour mixture. Add buttermilk all at once. Stir vigorously with fork.

Shape into ball. Place on greased 8 inch pie plate. Bake 15 minutes at 400 degrees, lower heat to 375 degrees and bake for 30 more minutes, or until knife comes out clean.

Remove from pie plate. Cool 1 hour. Cut into wedges or slices. Makes 10 large servings.
