I would love an authentic Italian style baked ziti. I usually just combine red sauce and mozzarella and ricotta cheeses. Without a recipe I don't feel I'm doing it right.

That's sounds about right to me...I followed the instructions on the back of a ziti box. It comes out really good. You could always add some chopped meat to the sauce to make it a little different.

Thanks Februarybride. Do you mix the ricotta with egg like when we make lasagna? Do you mix the cheeses with the sauce and stir in all the the pasta, or do you mix the sauce with the pasta and just layer the cheese? When I mix it all together and looks pink and I don't know if that's right.
I appreciate your suggestions.

I mix the ricotta, some mozzarella cheese and the pasta. I put a layer of sauce at the bottom of the pan then put the pasta/ricotta mixture then add sauce to the top and a little extra mozzerrella cheese.

The only cheese I add to the sauce first is parmesean while I am making the sauce.
I put a little sauce in the pan. Add cooked ziti. Add sauce and stir. Stir in ricotta (no egg like lasgana) and maybe a little shredded mozzerella. More sauce. Top with mozzerella and some more parmesean! Yum!

I mix some sauce and ricotta with the pasta. After this is mixed, I start putting in a little of the pasta mixture in to the baking dish. (I usually put some sauce in the pan before pasta) Then I put random spoon fulls of ricotta on the pasta...sprinkle some mozz. , sauce and parm. chesse, than add another layer of pasta. I keep on repeating until I'm done...then I top it with ricotta, mozz. parm, and more sauce.
I also whip up some eggs and pour it over the top (under the cheeses)
cat...I'm interested in that egg part? does it soak in or does it just give it a fluffy texture?

yabbobay-
It actually does a little of both.
I pour it over the top-before I put on the last layer of sauce and cheeses.
I pour it over and hit the pan on the counter a few times (gently) so it goes to the bottom pasta as well.

Ladies, these are all such wonderful suggestions. I think I just have to make several small pans and test each one out. Now doesn't that sound like torture????... for the hips, anyway!
