While searching through the old recipes, I saw that you make a bow-tie pasta dish with feta and asparagus. If you don't mind, would you share that recipe.
Thanks so much for the trouble.

Re: jenny2penny

I would have to see if I have the original still. I make it so much that I play with it each time and vary it.

SOOOOOOOOOOOO EASY, and eveyone loves it:

-box of bowties, cooked, drained, rinse with cold water, and cool.
-steam asparagus, bright green,,,,don't over cook to pea green , rinse with cold water, cool. (i've used brocolli when asparagus is out of season)
-Finely chop red onion (I've used yellow in a bind, just not the same though )

In a bowl: (of corse you can use full fat, but honestly no one knows the difference and you SAVE on fat & Cals)
Adjust for more if you like more dressing to pasta
cup of fat free mayo
cup non-fat yogurt
tablespoon lemon juice
tablespoon red vinegar
teaspoon fat free milk
Dill tabelspoon (more if you like dill)
salt & pepper to taste
crumbled Feta (more the better )

Mix all together. If you are not good at eyeing, FM me and I will get original recipe from my recipe book.

Jenny, this sounds really good. I didn't expect mayo and yogurt. I thought it would have an oil and vinegar dressing. I'll try to wing it before I put you to any more trouble.
Thanks so much.

My mom (and now I use it all the time when I go to BBQ's, etc) makes a cheese tortellini & broccoli salad which is basically just those two ingredients and a ton fo garlic & olive oil and some fresh grated black pepper & cheese. Simple & very yummy!
