I am having a good friends sign for me and my FH is asking one of his friends...other than that..I think we sign it and the rabbi signs it, right?

that sounds right - i think you are supposed to ask for two witnesses (both jewish, non-related) in addition to the rabbi. i would like to add a third witness since FH asked his friends to be both witnesses!

I think you should ask your Rabbi if that would be okay. Traditionally, it has to be only 2 people and he may have a problem with three
What you can do, is have 2 of his friends be the Ketubah whitnesses and 2 other people be the marriage license whitnesses. That way you can give 4 people the honor.
