Definitely better on a weekday...and during the day as opposed to evening hours.

But if I go on a Sunday and have an app with a specific person, won't they stay with me until I'm done?

Yes, they will stay with you until you are done. Just make sure you tell them your price range from the beginning SO they can direct you to the right place. Good Luck :)
