Re: knives?!
I just looked and we registered for the Henckels Everedge 13 pc knife block set. We got it as an engagement gift and they are great. Plus, they look good too... stainless steel/black.

Re: knives?!
We registered for the block set and the steak knives separately. We wanted the Wusthof Trident block set (full stainless steel from handle to blade) which we registered for at Bloomingdale's. Then we registered at Crate & Barrel for all our everyday stuff including the steak knives. We asked for 2 sets of 4.

Re: knives?!
Haven't done it yet, but I'm going to register for Wustof - I have one of their larger kitchen knives and a smaller knife and they are the best knives I've ever used, and I cook a lot. I'll probably pick my knives individually, but I'm sure their sets are top notch too.

Re: knives?!
We registered for the JA Henkels (SP?) International Black/Stainless Steel with steak knives at B,B & B. My FH is the cook, and a very good one, so he is really into his knowledge of cookware. We already got the knives as an engagement gift. They are awesome!
Oddly enough, they didn't come with a bread knife. So we bought that separately. There is a space for it on the block.

Re: knives?!
Hands down, Wusthof. Of all the knives I have tried, they feel the most balanced. They are pricey, but worth every cent.
They sell block sets without the steak knives, with slots for the steak knives (those extra 8 knives really jack up the price). You could register for the block and the steak knives separately to make it easier for people to buy each.
Hope this helps!

Re: knives?!
we registered for (and received) the Eversharp knives from Henckels. They are AWESOME!!!!!!!!! and, dishwasher safe!
I knew that we would never get a $400 set of knives (and honestly, I wouldn't want $400 knives). these are fantastic!
I got the Wustoff Trident 10-piece block set of Knives. I also bought separately the Santuko knife, which I love. These knives are unbelievable in quality, both DH & I love them. They are forged stainless steel from tip to handle.
We bought separate steak knives.

Re: knives?!
I got the 9 pcs Henckels about 5 years ago and they are very good. You do need to sharpen them. I also got a Santoku knife from Wustof. I add pieces to my set occassionally so I may need a bigger block soon but I keep some in a drawer in a holder.
