I wouldn't count on any type of real dairy cream. They will have to make pareve desserts if the temple is kosher. I would ask them if they make their cakes in house of if they have an outside baker they use. If so, then go to the baker and see if you can have some samples. Or look in some kosher baking books for ideas. Hope this helps.

you may be able to get a cannoli cream type of filling using soy products? I'd ask around. If your temple caterer doesn'yt ahve what you want, start calling kosher bakeries.
We had a pareve kosher cake. It was yellow cake with chocolate fudge filling, and fondant on the outside. It was delicious. Many pareve cakes can be absolutely delicious - it just depends on the baker.
