That was the WORST part when I did phase 1 before!! I made those veggie quiche cups at one point and they were marginally better. I think I might just eat hard boiled eggs instead this time around. Now I just have to figure out how to make a hard boiled egg...how sad is it that I'm not kidding?
ETA: If you haven't already, you might want to sign up for the South Beach email newsletter. They send you an email each day with advice and some recipes. They also said that you don't HAVE to eat the meals listed in their book -- so instead of eggs for breakfast, you could have cheese or veggies instead. I

When I did Phase 1 before, I lost 14lbs in just under 2 weeks, but I didn't cheat at all. I was really strict about following the diet. It was easier for me that time because FH and I were doing it together. When I moved to Phase 2, I started occasionally eating white bread and other not-so-great-for-you foods, so I gained the weight back.

14lbs? Thats great!! I really need to lose at least 20 by 7/21 (my first fitting!). I am going to try to saty on Phase 1 for 4 weeks, except I may have to add in a little fruit! No fruit during summer is a sin!

My fitting is next Saturday so I'm hoping that I can work out at my hotel when I'm away for work this week. I didn't exercise when I was lost the 14lbs (this is when I was in physical therapy for my ankle!) so I'm thinking that if I exercise, maybe I can lose even more I need to fit into my dress!
The only thing I need to figure out is whether I can still have sugar free Red Bull on Phase 1. I think it's fine but I'm not sure. I've heard people say that you should avoid carbonated beverages when you're trying to lose weight, but I don't know why?

not sure about why carbonation's bad for losing weight, but most people associate carbonation with sugar, and caffeine. sugar, we all know about, but caffeine apparently affects your metabolism too - but very minimally, which is why south beach still allows caffeine.

Just finished phase 2. I lost 8 lbs. I cheated tonight though. I had cheddar bisquets from red lobster for dinner and popcorn and candy at the movies. Oh well, I'll start fresh tomorrow. You have to cheat occationally right?

I know this is really old school...but instead of eating such a strict diet, why not watch your fat intake and hit the gym. Atkins and South Beach are temporary fixes. If you sway you gain it back so fast. You have enough time before the wedding to eat healthy and excercise the weight off.

That's what we need - temporary fixes! Thanks for the concern though!

Re: Ladies, I have to make an announcement...
the absolute worst part was the eggs!!!!!!!!!!!
But I do have to say, I really only did a strict south beach diet for 5 days. Then for the next 3 months I casually limited some carbs and somehow without really trying lost about 10lbs in 3-4 months.
It's actually a great way of eating. I don't think people realize how bad eating a lot of carbs are for you. It can definitely lead to high blood sugar and diabetes.
I'm starting to do it again.
The salmon with yogurt sauce is great!
