Re: LISA!! (Lisalana)
Ooops! Totally forgot about this. Thanks for reminding me Colleen.
Toffee-ish Cookies
• 1 sleeve of saltine crackers • 1 cup butter (unsalted) • 1/2 cup dark brown sugar • 12 oz semisweet chocolate chips (i use half semisweet, half white chocolate) • 1 cup chopped pecans or walnuts
Directions: 1.Preheat oven to 350 degrees.
2.Spray a large baking pan (i think mine is 13x9) heavily with cooking spray. Then, lay the saltines out in a single layer. You might have to cut some to fit.
3. Melt butter and brown sugar in a medium saucepan over medium to medium-high heat. Bring to a boil and cook for 3 minutes more, stirring constantly. Adjust temperature as necessary.
4. Pour butter- sugar mixture over the saltine crackers. Spread evenly, working quickly as it will begin to cool. Put pan in over and bake for 10 minutes. (Be careful not to burn!)
5. Remove from oven and immediately sprinkle with the chocolate chips. Wait a few minutes for the chips to soften from the heat. (or put back in turned off oven to melt quicker). When the chips are soft enough, spread them evenly over the entire layer of sugar covered crackers. Immediately sprinkle chopped pecans on top. Press the pecans slightly with a spoon so they are firmly in the chocolate and will be less likely to fall off when the bark cools.
6. Put the pan into the refrigerator and refrigerate for one hour. When the bark has finished cooling, remove the pan from refrigerator. Using your hands or a pizza cutter, break or cut the bark into pieces.
7. Store in an airtight container in the refrigerator.
8. Enjoy!

Re: LISA!! (Lisalana)
Also...I put foil down when I use it and coat that with spray--it's much easier to take off (and clean!).

Re: LISA!! (Lisalana)
That's true. Just don't use parchment or wax paper. I tried that once, and it was awful! I had to throw the whole batch away, bc I couldn't unpeel the stupid paper....
